SWEET GARLIC CHICKEN



SWEET GARLIC CHICKEN ...

Tender, moist and delicious! Only 6 WW points and 259 calories!
Serves 4
Prep Time - 10 min
Cook Time - 40 min
Total Time - 50 min

Ingredients
4 medium boneless, skinless chicken breasts (about 4 oz each)
1 tsp salt
2 tsp pepper
1 tbsp. dried basil
1 tbsp. olive oil
5 garlic cloves, minced
4 tbsp. brown sugar
Instructions
1.Preheat oven to 400
2.Line a rimmed baking sheet with foil and then spray with nonstick spray
3.Season chicken on both sides with salt, pepper and dried basil and place on prepared baking sheet
4.In a medium saucepan heat olive oil until shimmering
5.Add in minced garlic and let cook until soft & fragrant, about 2 minutes
6.Remove oil from heat and stir in brown sugar until smooth
7.Evenly spread brown sugar mixture over the top of each chicken breast
8.Bake for 30 - 40 minutes or until juices of chicken run clear
9.Serve & ENJOY!!

CHEESY CHICKEN SURPRISE

Cheesy Chicken Surprise
Serves 4
A stuffed chicken with a cheesy surprise. 

Ingredients
4 - 4 oz extra lean, skinless chicken breast
2 oz prosciutto - cut into 4 equal strips
3 oz blue cheese - crumbled
2 tbsp reduced fat cream cheese
1 tsp pepper
1 tbsp dried basil
1 tsp red pepper flakes (optional)

Instructions
Preheat oven to 350
Line a baking dish with foil and spray with nonstick spray
In a small bowl combine blue cheese, cream cheese and spices until thoroughly mixed
On the larger side of the chicken breast cut a slit into the chicken, making sure to not cut completely through the chicken, just about 3/4 of the way
Fill pocket with 1/4 of the filling (about 1/2 tbsp.), secure with toothpick if needed
Place 1 slice of prosciutto on top of each chicken breast
Place into baking dish and cover pan with foil
Cook for 20 minutes then remove foil and increase oven to 400 and cook until prosciutto is crisp
ENJOY!!
