SPINACH AND ARTICHOKE DIP

Spinach & Artichoke Dip 

What you will need:
1 bag fresh spinach (chopped) or 2 10oz bags frozen (I used frozen this time)
2 TBS garlic chopped (i used a bit more, love garlic)
3 TBS Butter
3 TBS Olive oil
1 14oz can Artichokes hearts (squeezed and chopped)
Half pint Heavy Cream
Sm bag of 3 cheese blend shredded cheese = 2 cups

Prepare:
Saute Garlic, butter and oil until garlic is slightly brown not dark.
Add Spinich and Artichoke hearts (make sure you squeeze the juice out of the hearts and chopped) cook until spinach is soft and cooked down.
Slowly add heavey cream and stir, You won't use the whole container just about 3/4 of cream. Let it cook about 5 minutes stirring frequently so it won't stick.
Add cheese, shut the stove off and stir well..
*Add seasonings (salt , pepper, Garlic powder) to taste*
*Tortilla chips for dipping or whatever you desire**

FRENCH VANILLA AND CHOCOLATE CHIP COOKIES

French Vanilla & Chocolate Chip Cookies

Ingredients.

1 Box French Vanilla Cake Mix
2 Eggs
1/2 Cup Vegetable Oil.
1 1/2 Cups Chocolate Chips
Bowl Of Cinnamon Sugar Mixture

Instructions

Mix cake mix, eggs and oil in large bowl. Fold in chocolate chips.
Make small teaspoon size balls and roll until coated in the cinnamon sugar mixture.
Place on baking sheet and bake at 350 degrees for 10-12 minutes

1 large avocado
2 teaspoons fresh lemon juice
1/2 cup greek yogurt
1 teaspoon hot sauce
1/4 cup extra virgin olive oil
2 garlic cloves
3/4 teaspoon salt.
Blend in blender until desired consistency use and store in fridge for several days.

PIE IN A JAR


Pie in a Jar 

These are the cutest little things ever, I make these all the time, you use half pint jars, and when I do I make a ton of them. And No the jars will not break in the oven 
You make your fav pie crust recipe or you can use frozen ones too just thaw them out No rolling required, all you do is press pieces of pie dough until they are filled to the top, no need to grease them, then you fill them with your fav pie fillings, use the jar ring to cut out for toppers if you wish to top them, I used a crumble top for mine. when your done put the lids on and pop them in the freezer. When ready to bake take lid off, put them on a cookie sheet and bake at 350 for about 50-60 minutes, or until the tops are golden brown and the middles are bubbly. If you're baking them fresh and not frozen they take about 45 minutes.
The crumble I use is
1/4 cup brown sugar
1/4 cup flour
2 tbsp oats
1/4 tsp Cinnamon
3 Tbsp cold butter
Combine sugar, flour and cinnamon. Cut in butter. I use a fork to cut in the butter, Add oats and stir till its all together

BAKED COD FISH

Kim’s Baked Cod Fish 

Ingredients:...
4 6-ounce pieces cod
Garlic Salt
1/2 tbsp butter
1 canola spray
Juice of 1 lemon
Parsley
Paprika
Preparation:
Preheat oven to 400 degrees.
Place fish in a baking dish large enough to hold the fish in one layer. Lay out foil and spray with canola spray. Season fish with a little garlic salt, parsley, paprika, salt, and pepper. Add a pat or two of butter. Seal foil
Bake for 12-14 minutes until fish flakes easily with a fork.

LISA'S CHICKEN SALAD

1 cooked chicken breast cut up fine 
1 celery stalk chopped 
1 small apple chopped ( I leave the skin on)
15 whole pecans chopped ( i only have whole ones so had to count them LOL)
2 heaping tablespoons of hellman's Mayo (thats all I use )
Salt and pepper to taste

In a big bowl (if you're anything like me you need a big bowl so you don't make a mess LOL) Cut up your chicken ( I cut it and them use my fingers to make is smaller) add your celery, apples and pecans, add your mayo salt and pepper and mix well.
I have added dried cranberries before grapes if I have them.

CHEESEBURGER STUFFED MUSHROOMS

Cheeseburger Stuffed Mushrooms! OMGsh!! 

INGREDIENTS:

8 Medium Portobella or Gourmet Stuffing Mushrooms...
1/2 Lean ground beef ( turkey can be used)
1/2 ripened Avocado
1 Tsp Worcestershire sauce
2 Tbs Parmesan cheese
1 tsp Salt
1 tsp pepper
8 small slices of cheese ( I used American)
2 small tomatoes sliced
8 Basil leaves

DIRECTIONS:

Clean out mushroom from stems and gills and wash and dry
Pre heat oven to 350 °
In a medium bowl mash avocado with beef,Worcestershire sauce, Parmesan Cheese , salt and pepper and a dash or two of Cayenne Pepper
Mix well together.
Stuff each mushroom with mixture.
Bake for 15 minutes ..remove from oven add cheese.
Return to oven for an additional 15 minutes..
When done add Basil leaf to each and a sliced tomato!

ZUCCHINI CASSEROLE

 Zucchini Casserole

1 lb lean ground beef... Brown. Add one diced sweet onion.
1 clove diced garlic,
Two cans diced tomatoes, or three large tomatoes diced. I have used both. 
Can of corn or three corn cob.. cut off cob
Simmer for five mins or fifteen mins if used fresh tomatoes
Slice three or four good sized zucchini.. place all around top to cover. Steam for ten mins then turn off heat. Add shredded cheese, cover and let cheese melt. You don't have to use that much cheese... I sometimes don't use any at all. 
This is delicious. The whole family will love it.

CHOCOLATE CHIP BLONDIES

Chocolate Chip Blondies

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon table salt
1 1/2 cups unpacked brown sugar
6 tablespoons light butter
2 large egg whites
1 teaspoon vanilla extract
3/4 cup mini chocolate chip
1/3 cup water
Directions
Preheat oven to 350°F In a small bowl, combine flour, baking powder and salt.
In a large bowl, beat brown sugar and butter until fluffy. Add egg whites and vanilla. Gradually beat in flour mixture alternating with water. Stir in chips.
Spread into a foil-lined 9- x 13-inch baking pan. Bake until golden, about 20 to 25 minutes. Cool on wire rack. Remove foil and cut into 24 two-inch squares.

CHICKEN SPINACH CRESCENT RING

Chicken Spinach Crescent Ring

1 (8 ounce) cans reduced-fat pilsbury crescent rolls ( 8 rolls)
4 tablespoons weight watchers reduced-fat whipped cream cheese
1 cup fresh Baby Spinach
5 ounces cooked grilled chicken strips
1/3 cup weight watchers reduced fat cheese
Directions
Place Cresent Rolls with points out to edge and create a ring. Spread cream cheese on cresent rolls, place spices of your choice on top of cream cheese, place spinach on cream cheese, next evenly spread grilled chicken, then mexican cheese.
Now pull up points of cresent rolls and wrap around ingredients and tuck under the top.
Bake at 375 for 14 minutes.

SWEET GARLIC CHICKEN



SWEET GARLIC CHICKEN ...

Tender, moist and delicious! Only 6 WW points and 259 calories!
Serves 4
Prep Time - 10 min
Cook Time - 40 min
Total Time - 50 min

Ingredients
4 medium boneless, skinless chicken breasts (about 4 oz each)
1 tsp salt
2 tsp pepper
1 tbsp. dried basil
1 tbsp. olive oil
5 garlic cloves, minced
4 tbsp. brown sugar
Instructions
1.Preheat oven to 400
2.Line a rimmed baking sheet with foil and then spray with nonstick spray
3.Season chicken on both sides with salt, pepper and dried basil and place on prepared baking sheet
4.In a medium saucepan heat olive oil until shimmering
5.Add in minced garlic and let cook until soft & fragrant, about 2 minutes
6.Remove oil from heat and stir in brown sugar until smooth
7.Evenly spread brown sugar mixture over the top of each chicken breast
8.Bake for 30 - 40 minutes or until juices of chicken run clear
9.Serve & ENJOY!!

LAYER BARS

This layer bar is a must make! To make it even better you can top it with anything you like such as: rolos, toffee bar bits, salted caramel, pecans, m&m's...anything you would like!!!

mmmm...Layer Bars

Serves 30

A delicious version of a layer bar with a brownie base and tons of yummy goodness baked on top

Prep Time - 20 min

Cook Time - 45 min

Total Time - 1 hr 30 min

Ingredients
3 oz bittersweet chocolate
3 oz semisweet chocolate
1/2 cup butter
1 cup flour
1/2 tsp baking powder
1/2 tsp salt
1/2 cup sugar
1/2 cup brown sugar
2 eggs
2 tsp vanilla extract
1/2 cup chocolate chips
1/2 cup peanut butter chips
1/2 cup Miniatures Peanut Butter Cups, chopped into bite size pieces
1/2 cup sweetened condensed milk

Instructions
1.Preheat oven to 350
2.Spray a 9x9 pan with nonstick spray and then line with parchment paper, making sure to leave some hanging over to make it easier to remove the cooked bars
3.Place chocolate & butter in a microwave safe dish and heat in the microwave in 30 second increments until the butter is melted and the chocolate is smooth when stirred
4.Set aside to let cool slightly
5.In a medium bowl whisk together the flour, baking powder & salt then set aside
6.In the bowl of a mixer beat sugar and chocolate mixture until well-blended
7.Add in eggs, one at a time beating until well combined after each egg
8.Mix in vanilla
9.Add in flour mixture in 3 or 4 portions, mixing until just combined
10.Pour batter into prepared pan and bake for 12 minutes
11.Remove pan from oven and sprinkle toppings over partially baked brownies
12.Evenly pour condensed milk over toppings
13.Bake for 30-35 minutes, or until set and starting to brown
14.Cool completely in pan on wire rack

GRILLED VEGGIE COUCOUS

I love this dish when the weather heats up!

Summer Couscous

Serves 12

A delicious summer couscous

Prep Time - 10 min

Cook Time - 1 hr

Total Time - 1 hr

Ingredients
2 baby eggplants - cut into 1/2 inch thick slices
2 yellow squash - cut into 1/2 inch thick slices
1 red bell pepper - seeded & cut into quarters
1 yellow bell pepper - seeded & cut into quarters
6 green opnions
non-stick olive oil spray
1 Tbsp salt (divided)
1 Tbsp black pepper (divided)
1 1/2 cups water
2 cups fat-free chicken stock (or broth)
2 cups uncooked couscous
2 Tbsp red wine vinegar
1 Tbsp dijon mustard
1/4 cup extra-virgin olive oil
1/2 cup chopped fresh basil

Instructions
1.Heat grill (or grill pan) to medium-high heat
2.Spray eggplant, squash, bell peppers & green onions with olive oil spray & sprinkle evenly with 1/2 the salt and pepper
3.Place veggies on grill for 3 minutes on each side until slightly charred
4.Cool & chop veggies into small bite-size pieces
5.Place in a large bowl & set aside
6.In a medium saucepan bring water and chicken stock to a boil
7.Stir in couscous and reduce to a simmer
8.Cook for 8 minutes, or until couscous is tender
9.Drain and rinse with cold water
10.Add couscous, remaining salt & pepper to veggie mixture & gently stir to combine
11.In a small bowl combine whisk together vinegar & mustard until combined
12.Slowly whisk in olive oil to combine
13.Drizzle over the veggie and couscsous mixture, stir to combine
14.Add in chopped basil and stir
