ZUCCHINI CASSEROLE

 Zucchini Casserole

1 lb lean ground beef... Brown. Add one diced sweet onion.
1 clove diced garlic,
Two cans diced tomatoes, or three large tomatoes diced. I have used both. 
Can of corn or three corn cob.. cut off cob
Simmer for five mins or fifteen mins if used fresh tomatoes
Slice three or four good sized zucchini.. place all around top to cover. Steam for ten mins then turn off heat. Add shredded cheese, cover and let cheese melt. You don't have to use that much cheese... I sometimes don't use any at all. 
This is delicious. The whole family will love it.
